The tequila and mezcal we know today started in a very different form, in its earliest version, it was known as pulque and was made from the fermented sap of the agave plant (maguey). Pulque was first documented via pictograms on stone walls around 200 A.D. This same technique of fermentation likely dates back to 1000 B.C. and was used by the Olmecs.
